Since its inception, The Settlers Inn has been rooted in the farm-to-table philosophy. That dedication to freshness sprouted our new Chef’s Demonstration Garden. Vegetable beds surrounding The Potting Shed will yield a variety of organic produce to incorporate into dishes at The Settlers Inn. While the majority of produce will continue to come from local farms, the on-site garden will serve to further illustrate the vital relationship between fresh, quality ingredients and unrivalled taste.

Inspire

Chef De Cuisine, Kate Woehrle, has a passion for gardening. She approached owner Grant Genzlinger and Executive Chef Ben Sutter with the notion of planting a garden just steps from the Inn’s kitchen. They wholeheartedly embraced the idea. “I love walking out and picking fresh vegetables and coming back and cooking with them,” explains Chef Kate. She says they chose interesting items to plant that visitors to the garden may not typically see growing. Rows of garden beds feature things such as purple and white striped eggplant, kohlrabi, artichokes and Brussel sprouts. The inaugural crop also includes habanero and banana peppers, chive and sun gold tomatoes. The vintage heirloom tomatoes, known as “mortgage lifters,” are one of Chef Kate’s favorites. The tomato variety was cultivated during the Great Depression and grew so large they were a hit with customers and therefore easy for farmers and nurseries to sell. The garden also boasts aromatic herbs such as lemongrass, spearmint and peppermint, which are often used as a garnish for pastries and drinks. Basil and thyme fresh from the garden will enhance many dishes throughout the season.

Taste

Guests to The Settlers Inn will reap the rewards of produce and herbs freshly picked from the garden. “The tomatoes in particular will taste phenomenal,” assures Chef Kate. She’s excited to share her love of gardening through food. A college trip to a farm in the Adirondacks sowed the seeds for Chef Kate’s passion for gardening and farm-to-table cooking.
