Meet Executive Chef Kate Woehrle

Executive Chef Kate Woehrle’s passion and exuberance for cooking are practically contagious. For nearly eight years she has worked in the kitchens of Settlers Hospitality and is the creative force behind many of the restaurants’ farm-to-table features. The joy she gets from feeding people is one of the perks of the job. “I love watching someone’s face light up when they try something that’s really good,” exclaims Chef Kate.

Planting Seeds

The graduate of Paul Smith’s College discovered her professional calling at an early age. “I cooked dinner for my family as a kid and fell in love with it. Being creative and then being able to eat it, was pretty stellar,” she says. Chef Kate earned her chops working her way up the line at Glass- and The Settlers Inn. She began as Garde Manger before becoming a Prep Cook, Bakery Assistant, Line Cook, Sous Chef and Chef de Cuisine. Today she serves as Executive Chef of Settlers Hospitality’s flagship property- The Settlers Inn. She says her simple and elegant cooking style aligns well with The Settlers Inn cuisine. She was also drawn to the Inn’s farm-to-table philosophy. “The Settlers Inn was farm-to-table before it was trendy. I think that alone makes us unique. Our menu changes very frequently to accommodate what’s in season,” she explains. As an avid gardener, she also relishes the opportunity to get her hands dirty with the Inn’s new Chef’s Demonstration Garden.

Cultivating Flavors

Working in a predominately male profession, Chef Kate says she looked up to women like renowned Chef Alex Guarnaschelli. “Seeing another female chef be so successful is a huge inspiration,” says Chef Kate. “She’s so real and down to earth. I love her style of cooking and her no nonsense attitude.” Chef Kate channeled that inspiration into a successful career of her own. She thoroughly enjoys the creative process of cooking and preparing a wide array of foods, but says she has difficulty pin-pointing one signature dish. “I love to cook slow food- braising meats, making soups, stews, ragu,” she states. “I like how flavors change when you cook them for a very long time and coaxing maximum flavor over an extended period.” Thyme is her go-to ingredient in the kitchen because it’s so earthy and accents flavors well

Growing Higher

Keeping pace with the ever-changing culinary scene is another part of the job. She points to the current trend of meatless options such as Beyond Sausage and the Impossible Burger as the wave of the future. “I think it’s is going to continue to be the norm as people try to eat better and be more conscientious of their carbon footprint,” explains Chef Kate.

Reaping Rewards

When it comes to dining, Chef Kate’s main priority is for guests to leave full and happy. “I hope they’re eager to tell their friends all about this adorable Inn they found in the Poconos,” she shares.
